Two Territories, One Carefully Crafted Blend
Our olive oil is a unique blend born from the fusion of two great olive-growing traditions, both managed with the utmost care and direct control:
- The Garda Notes (Trentino):
From our lands we obtain the light and delicate notes that give the blend its natural elegance and freshness, typical of our region. - The Heart of Character in Puglia:
For structure and aromatic intensity, we directly manage our olive groves in Puglia. In this land of great tradition, we work with our own staff and equipment, ensuring that our strict agronomic practices are fully respected.
In Puglia we have established an essential and rare collaboration with Frantoio Intini, an internationally award-winning olive mill. This partnership goes beyond simple milling: it is an exchange of support and technical knowledge about local Apulian cultivars. This synergy allows us to maximize the organoleptic quality of the varieties used.

The care we dedicate to our land is at the heart of our philosophy:
- Early Harvest and Rapid Processing:
We harvest olives when antioxidant levels are at their peak and press them within 12 hours. Cold extraction preserves all nutritional elements. - Regenerative Agriculture (Green Manure):
We sow cover crops between the rows to enrich the soil with nitrogen, improve soil structure, and increase biodiversity. - Potature Mirate: Eseguiamo potature annuali che assicurano luce e aria ottimali a ogni pianta, essenziale per la salute del frutto e la concentrazione dei sapori.
